Ingredients

3 large eggs

Instructions
1. In a large bowl, whisk together the gluten free flour and salt. Create a well in the center and add eggs, olive oil, and water. Gradually mix the flour into the wet ingredients. Knead for 5–7 minutes until smooth.
2. Let the dough rest for 30 minutes.
3. For the filling, combine ricotta, sautéed spinach, nutmeg, salt, and pepper in a bowl.
4. Roll out the dough on a floured surface, cut into squares, and spoon the filling onto each. Seal and cut with a ravioli cutter.
5. Bring a large pot of salted water to a boil and cook the ravioli for 3–4 minutes.
