Description

This gluten free dairy free bread recipe is soft, moist, and perfect for sandwiches or toast. Simple ingredients and easy steps make this a go-to bread recipe.


Ingredients

Scale

2 cups gluten free all-purpose flour (with xanthan gum)

1 cup warm water (about 110°F)

1 tablespoon olive oil or melted coconut oil

1 tablespoon maple syrup or honey

1 tablespoon active dry yeast

1 teaspoon salt

1 tablespoon apple cider vinegar

2 large eggs (or flax eggs)

¼ teaspoon baking soda


Instructions

1. In a small bowl, combine the warm water and maple syrup. Sprinkle the yeast on top and let it sit for about 5–10 minutes until the mixture becomes frothy.

2. In a large mixing bowl, whisk together the gluten free flour and salt.

3. Add the yeast mixture, olive oil, apple cider vinegar, and eggs to the dry ingredients. Stir well until fully combined.

4. Beat the dough for 2–3 minutes until smooth. The dough will be thick but should not be dry.

5. Grease a loaf pan and spoon the dough into the pan, smoothing the top with a spatula.

6. Cover the pan with a damp cloth and let the dough rise in a warm place for 30–45 minutes, or until it has doubled in size.

7. Preheat your oven to 375°F (190°C). Once the dough has risen, place the pan in the oven and bake for 25–30 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.

8. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.


Notes

Store leftovers in an airtight container for up to 3 days in the fridge.

This bread can be toasted, used for sandwiches, or enjoyed with your favorite spreads.
