Description

This gluten free cookie dough is rich, safe to eat raw, and made with simple ingredients. Dairy-free chocolate chips make it the perfect treat for everyone, with no need to bake.


Ingredients

Scale

1½ cups almond flour (heat-treated)

¼ cup oat flour (gluten free certified)

½ tsp salt

⅓ cup maple syrup

2 tbsp almond butter

1½ tbsp coconut oil (soft)

1 tsp vanilla extract

¼ cup almond milk (or oat milk)

½ cup dairy free chocolate chips


Instructions

1. In a bowl, mix almond flour, oat flour, and salt.

2. In another bowl, whisk together maple syrup, almond butter, coconut oil, and vanilla.

3. Combine wet and dry mixtures until smooth.

4. Fold in chocolate chips.

5. Chill for 30 minutes to firm up.

6. Store in a jar or scoop into small balls for snacking.


Notes

Store in an airtight container in the fridge for up to 5 days.

Can also be rolled into balls and frozen for a grab-and-go treat.
